Our engagement story

4 years ago today was the best day of my life. And then 14 months later was the new best day of my life. And every day since then have been the best days of my life.

And here we are on our engagment- and I thought I loved you then. I thought THOSE were the best times, but every day since have been the best times. So to celebrate the beginning of the best days of our lives (or really to celebrate spring break, which coincides with our engagement-aversary), here’s the story of us taking the next step. And by the time you read this, we’ll be well on our way to spending a week in the Caribbean, cruising the waters and making new best days of our lives.

Here’s a recap of what happened March 23, 2008… one of the best days of my life, forever engrained in my heart.

Sunday March 23 was Easter Sunday and having gone to the Easter vigil church service, Merrick and I had a nice, relaxing Easter day. We had brunch, watched some movies, hung out and then spent most of the afternoon at Laguna Beach. It was a perfect beach day -  80’s, sunny, gorgeous!

Merrick had made dinner reservations for us that evening, because in addition to Easter, it was also our anniversary. So we went back to his place and got ready. It was a dressy occasion, as anniversaries are – suit & tie, dress and heels…

We drove down to Dana Point, a beach community just south of him for dinner at an amazing seafood place, Cannon’s, complete with a perfect view of the harbor, the ocean and a BEAUTIFUL hotel right next door. We had a very leisurely dinner, ordered a nice bottle of wine, had tantalizing appetizers and entrees and really just enjoyed our time together. Merrick kept mentioning the hotel next door and joked about how “when we’re married and rich we’ll stay at that hotel blah blah blah.” I didn’t really pay much attention to it, I just noted to put that hotel on our bucket list, for some day.  After dinner he suggested going back to his place to open our anniversary presents and hang out. So we get into his car but he said, “But first I’m going to blindfold you” So he put the blind fold on me and drove around for about 10 min, stops, finally took me out of the car, led me into a building and up an elevator then into a room, still blindfolded. (It was about the time in the elevator I thought we might be in the hotel…)

As soon as we entered a room, he took off my blindfold and I realized we were in the top penthouse suite of the hotelHUGE balcony overlooking the harbor and ocean, fire lit in the fireplace, rose petals all over the floor and our song playing on the iPod. (Merrick’s roommate had set everything up while we were at dinner). Once I’d fully taken in everything around me, Merrick said, “lets open our anniversary presents.” which just so happened to be placed by the fire. The first present I opened was a huge 18×24 empty picture frame and I thought, “how sweet, we can have a picture of us blown up and framed!” The next present was a puzzle – a picture puzzle. We’ve done puzzles before, and I had made him a picture puzzle in the past, and puzzles have kind of been representative of US because our thing had always been, “You’re the final piece to my puzzle…” So he said “Lets do the puzzle then we can frame it!” … I still had no idea what was coming at this point…

So we sat by the fireplace and started putting the puzzle together. It was about 200 pieces and I realized a) I’m not very good at puzzles and b) I’m not very patient. I kept trying to put pieces together in the middle that just were NOT fitting and it was getting so annoying! But we finally had almost finished, and the border was about 20 2×2 pictures of he and I, and in the center was one beach picture of us. In the top left hand corner it said “Catherine Anne, I love you” and the bottom right hand corner it said “Yours forever, Merrick Joel” But there were still a number of pieces missing in the middle, but we didn’t have any extra pieces left over. Merrick was a little bummed and said, “Shoot, maybe I lost them when I was transferred the puzzle here” but we looked around us and somehow he “found” them next to him (aka pulled the other pieces out of his suit jacket), so we started putting the whole middle chunk together until it was completed and said “Will you marry me?”

When it was finally all put together (which I really ONLY knew what was going on those very last moments when I could read the middle part before it was completely put together) I just stared at the puzzle and at him, then he brought out the ring and smiled and asked, “So will you marry me?” Of course I cried and said YES YES YES!!!!   Then he popped some champagne that had already been chilling and we watched the stars and had a wonderful night with my FIANCE!

The following morning, Merrick had taken off of work and we checked out of the hotel and drove the 3o minutes back to his place. He had told me we were going to meet 2 of his coworkers for lunch, which we did most weeks I was in town. However, when we get there, it wasn’t just Travis and Sara.  ALL of our friends were there for a surprise engagement lunch!!! It was so fun and so nice to see everyone (and show off my beautiful ring!) After lunch we went back to his place for a while to prepare for the final event of our engagement weekend. For my anniversary present to him, I had gotten us a ride on a hot air balloon over San Diego at sunset, complete with a “Happy Anniversary” sign and champagne. With a quick change of plans, the sign was changed to “Congratulations!” and we rode in the hot air balloon, soaking in each glorious moment of our new-found love, fantasized about our dream wedding and our life together and ended with a champagne toast back on the ground – toasting to our new beginnings and the best day of our lives, not realizing that the best was yet to come…

A little while ago, Merrick and I had some extra lemons that were gonna go bad soon. We didn’t have much use for them, but also didn’t want to waste them. Then I got the (brilliant if I say so) idea to make lemon bars for a little sweet treat.

I found a random recipe online and decided to double it since we had so many lemons. The recipe called for the “zest” of one lemon… so obviously the zest of 2 for my recipe. Being the Martha Stewart that I am, I had to look up what the “zest” was, which apparently means grating the lemon peel just until you see the white. But since I had so many lemons and didn’t want to waste anything (or really because the definition of “zest” still alluded me, even after talking to my friend Google), I got a little too zesty. Meaning, instead of grating the peel until I saw white, I grated the whole peel. 6 whole peels in fact.

One little finger dip into the batter and I realized something was very very wrong. So being the Master Chef that I am, I decided to ditch the recipe (please! What do THOSE cooks know anyway!) and added a pinch more of sugar, a pinch of this, a few more pinches of that to make the best damn lemon bars ever.

Turns out, the recipe writers actually DO know what they’re talking about when they write recipes.  It turned out to be this lemony, cakey, soggy mess  and was absolutely DISGUSTING! Even my official taste tester barely choked down his bite of the finished product (although I have to give him credit, he tried. He tried so hard). Needless to say, the lemon bars weren’t exactly the sweet treat I was going for. . So not only have I wasted 6 lemons, about an hour of my time and apparently now a 9 x 13 pan of Lemon Bar Poo.

In comes brilliant idea #2: Everyone knows co-workers eat anything right? I’ll take them to work!

So I bring them to work, cut up in pieces and in a nice bag. I also added the nice touch (so they wouldn’t know I made this heinous dessert) with a note that said “To 5th floor staff, Thanks for all your loving care while we were in the hospital! love the Garcias.” I stuck it on the table in the breakroom when no one was in it.
Later in the afternoon I went in the breakroom, which was now full of my coworkers. I noticed my lemon poo on the table and in an effort to play cool, I said, “Mmmm what’s that? Who brought that in?” (obviously another tactic to clear my name). One of my co-workers spoke up and said, “It tastes like one part lemon bar, one part fruit cake, and like 50 parts butthole.” He actually recommended me NOT to eat it unless I wanted to puke and said, “I think there are actual feces in there”

Moral of the story: -Don’t always trust the food at work. -If it calls for “zest” of a lemon, that doesn’t mean grate the entire peel x 6. -Co-workers will, in fact, eat anything. -The recipe writers are culinary geniuses, you, mere mortal, are not. Don’t pretend like you are, or that you can stray from their words of wisdom AT ALL. -Lemon bars are still delish.
Now who wants to come over to MY house for dinner? I make great desserts…
(PS I now stay away from anything requiring a “zest” and I follow recipes for real)

Big love in Texas

I had the pleasure of witnessing one of my oldest friends get married to her sweet, Texan cowboy last weekend.

The earliest memory I have of Mary is when she was in 7th grade and I was in 6th grade and I had just made the HUGE leap into the cool middle school youth group. I was all scrawny and intimidated, but Mary – one of the older, much cooler girls was so sweet to me. And we’ve kinda been stuck ever since. We’ve literally grown up together and have seen each other through every milestone. Birthdays and drivers licenses and graduations, and everything in between and everything after. Because Mary was older and always hit the milestones a year and a half before me, I was so grateful to have her and the other cooler, older friend, Maria there guiding me as I grew up behind them.

The three of us were together as we were angsty teenagers dealing with our crazy mothers (I love you Mammacita!). Mary and Maria were there hosting my 20th birthday party in the big girl apartment when I was still in the dorms. They were there giving me shots at my wedding (and holding my hair back after…) .

We were there together celebrating Maria’s wedding. These girls get me like no one else does. They get my history and my family and most importantly, my faith. They get Merrick and I and our future plans. They still can get a little crazy with me when we need to dance and drink.

Mary has always been there for me, for Maria and for everyone she knows. So though I’m sad to see Mary halfway across the country in Lonestar Land, and so far from Maria and myself, I’m so incredibly happy Mary found the guy who will be there for her.

And though she’ll say she found big love in Texas, I gotta say I found big love in Michigan with her and Maria as beautiful girlfriends who allowed the pesky little 6th grader to tag along behind in admiration.

There’s no business like show business!

I love going to the theater… the real theater, not the movie theater. I love shows and musicals and the whole song and dance, I love it all!

It all started a long long time ago when my parents first took us to see Les Miserables. We had nose bleed seats, but were still thrilled about getting all fancy pants and driving into Detroit’s finest, plus us kids brought binoculars so we could see. Little did we know that the family friend who joined us on our first theater experience would HOG THE BINOCS ALL NIGHT! Despite not being able to see anything, that show sparked my love for the theater.

Then came “Joseph and the Amazing Technicolor Dream Coat” with sweet seats cuz my friend was in the children’s choir in it. So we got back stage passes and I even shook Donny Osmond’s hand (oh be still my swooning 13 year old heart!).

After that, the shows kept coming. My Dad took us to Phantom and Lion King and Stomp. But the crowning glory was Les Mis, take 2. This time we were in London, 3rd row. And oh my word, it was incredible.

And then the SCB came into view, and I found out HE loved the theater too! (Oh be still my swooning 21 year old heart!) The first show the Mister took me to was Wicked in LA for a Christmas present. Then the shows started rolling in… We discovered VEGAS and the glory of those shows and oh those Cirque du Soleils!

We hit up Jersey Boys (the Mister’s favorite) and The Color Purple (nobody’s favorite!) and saw some repeats like Lion King, Phantom, Blue Man Group and Wicked again.

Just a couple weeks ago, as a “Congrats for finishing the semester” he took me back up to LA to see Beauty and the Beast. It was incredible! A lot of theater adaptations and I liked it better than “Lion King,” which stuck mostly to the movie.

And back in December for his birthday, I bought him tickets to see Les Mis… the one he’s been waiting and dying to see (In the competition between husband and wife, I won the award for best gift giver last year, boo yah!). Although it doesn’t come to LA until June (we’ll just call it his half birthday gift), we’re already listening to the soundtrack and I’m already singing along with my favorite Eponine.

Next on the list include Hair Spray, Mamma Mia, Rent (possibly… love the music, don’t dig the story line so much), Shrek the Musical, Little Mermaid, In the Heights, Chicago… etc!

So even though we’re lame and stay in most of the time, and don’t even have cable, we sure know how to keep it klassy with the theat-ah, the theat-ah. Cuz like they say, “There’s no business like show business” (and man they sure are getting our biz-nass, we gone be broke seeing all these shows!)


How do you call your lover-boy?

My lover-boy surprised me with a little gifty yesterday when I came home from work. I knew something was fishy when he said, “Can you check in your white purse, I think I dropped my keys in there the other day and I can’t find them…” I peek in the magic bag and discover this:

My live-in Johnny Castle had never seen it (what?!) so he held me close while we watched the love unfold between Baby and Johnny while we dreamed of moving like they do, quoting lines like “I carried a watermelon” and “Nobody puts Baby in a corner!” and “How do you call your lover-boy? Come here lover-boy!”
